A Series of Un-Instagrammable Food: Onion & Bell Pepper Omelet

This was admittedly thrown together using leftover veggies, eggs that had to be used up before November 1, and a lot of butter. However, it makes a pretty nice, kind of medium lunch. This recipe also serves 3 people.

You will need:
6 eggs
1 whole onion
1/2 of a bell pepper
A handful of mozzarella cheese
A handful of mild cheddar
Butter or margarine (for cooking)

I beat the eggs first, and then chopped up the onions into tiny pieces (also, does anyone have a way to cut onions without the fumes attacking your eyeballs?). Chop up the bell pepper into tiny pieces too, and add both bell pepper and onion into the egg and give it a good stir. Put a generous amount (I probably used more than one serving size), and cooked on medium heat for 10 minutes.

There were no cooking mistakes, but unfortunately, some egg got stuck on the bottom of my pan, so there's the only mistake. No matter, because that was more of an aesthetic mistake than anything else. You can season it with salt and pepper, but I found that due to the amount of margarine I used, I didn't need to season it.
